Gentleman's Whiskey Bacon Jam

Ingredients
  1. 1 and 1/2 thick sliced bacon strips, chopped finely
  2. 8 shallots, chopped finely
  3. 1 large sweet onion, chopped finely
  4. 2 garlic cloves, minced
  5. 1 tsp chili powder
  6. 1/2 tsp paprika
  7. 1/4 tsp Kosher salt
  8. 1/4 tsp pepper
  9. 1/2 C whiskey
  10. 1/2 C maple syrup
  11. 1/4 C balsamic vinegar
  12. 1/2 C packed brown sugar
  13. assorted crackers
Instructions
  1. 1. In a large skillet, cook bacon over medium heat until crisp. Drain on paper towel. Discard all but 2 tsp bacon drippings
  2. 2. Add shallots and onion and cook over medium heat until caramelized, stirring occasionally for 5-7 minutes
  3. 3. Stir garlic into onion mixture and cook for 30 seconds. Add the seasonings.
  4. 4. Remove from heat and stir in whiskey and maple syrup.
  5. 5. Increase heat to high and bring to a boil for 3 minutes, stirring continuously
  6. 6. Add crumbled bacon and reduce heat to low for 12 minutes, stirring every few minutes
  7. 7. Allow jam to cool slightly, then pulse half in a food processor until smooth
  8. 8. Stir puree into remaining jam and serve on assorted crackers
