- Cure prok belly with a salt and sugar mixture for 7 days. Once cured slow roast in oven 300f about 3 hours. Stew sweet potatoes in cream until soft, blend until smooth and season. Hydrate dried cranberries with maple syrup on low heat. Simmer bacon and drain. Mix all together. Whip egg whites and coat pecans crumbs with kosher salt roast in a low oven until crisp.
