Ingredients
  1. 2 Idaho potatoes
  2. 1 pound pulled pork
  3. ½ pound of bacon
  4. ½ cup flour
  5. 3 oz bacon fat
Sauce
  1. 2 oz veal demi glaze
  2. 4 oz bacon (crispy)
  3. 1 tablespoon flour
  4. 1 cup unsalted beef stock
Fry station
  1. Egg wash
  2. Flour
  3. Panko
Instructions
  1. Boil potatoes, strain and reserve
  2. Chop pulled pork
  3. Chop bacon, cook it until almost crispy, reserve bacon fat
  4. Mix potatoes pork, bacon, bacon fat, and flour
  5. Scoop pork & bacon mixture (2oz)
  6. Flatten slightly in a disc
  7. Dredge disc in flour, egg wash, and panko
  8. Fry disc until golden
Sauce
  1. Warm beef stock, add veal demi glaze
  2. Make roux with bacon fat and flour, reserve
  3. Thicken beef stock with roux, add crispy bacon
