  1. 1 bag Masa
  2. 1 gal Water/Chicken Stalk
  3. 4 cups Canola Oil/lard
  4. ¼ cup Red Chile Powder
  5. ¼ cup Garlic Powder
  6. ¼ cup Salt
  7. ¼ cup Baking Powder
  8. 8 lbs bacon
  9. 2 cups Green Chiles
  10. 1 lb Shredded Cheese
  11. Salt and Pepper to taste
  1. Add masa mixture to water/chicken stalk. Mix with red chile powder, garlic powder, and salt. After it gets fluffy, mix in baking powder. Let sit for 30 minutes. Cook bacon while chopping chiles and add cheese. Soak corn husks and spread mesa mix, add bacon pieces. Fold husk (side, bottom, side). Baste bacon in honey mixture and wrap around the tamale. Place 2 cubes cheese on decorative toothpick to hold bacon in place.
