Waffle

  • 1 Box Waffle Mix
  • 10 Cups Water
  • 2 lb pea size cooked bacon
  • 1 Tbsp Vanilla
  • ⅓ Cup Maple Syrup
  • 1 tbsp Salt
  • ½ Cup Bacon Fat

Mix all ingredients in a large bowl. Use a waffle maker to cook the waffles.
Chicken- Mix all ingredients except for chicken in a large bowl. Pour over chicken and let sit overnight. Dredge chicken in flour mix. Fry in canola oil at 350f until done.


Chicken

  • 3lbs Chicken Tenders
  • ½ gal Buttermilk
  • 4 Eggs
  • 3 tbsp Tabasco
  • 1 Sprig Fresh Sage

Mix all ingredients except for chicken in a large bowl. Pour over chicken and let sit overnight. Dredge chicken in flour mix. Fry in canola oil at 350f until done.


Flour Mix For Chicken

  • 1 qt Flour
  • 2 tsp Black Pepper
  • 2 tsp Salt
  • 1 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Ground Sage

Dredge chicken in this flour mixture.


Maple Reduction

  • 1 lb Cooked and Drained Bacon
  • Deglazed with Apple Cider
  • 1 gal Apple Cider
  • 2 gal Maple Syrup
  • 1 cup of Bacon Deglazing Reduction
  • Water

Cool bacon in a large stock pot until crispy. Remove bacon. Remove bacon fat. Heat pot back up briefly. Pour in 4 cups of the apple cider to deglaze making sure to scrape bits of bacon up. Strain reduction in fine sieve. Using a clean stock pot add remaining ingredients and boil until slightly thick. Cool and reserve for later.


Marscapone Mousse

  • 8 oz Marscapone
  • 1 pint Heavy Cream
  • 1 tbsp Vanilla
  • 1 tbsp Salt
  • ⅓ cup Maple Syrup

Bacon Dust

  • 1 lb Cooked Bacon (barely to a crisp)
  • ¼ cup Black Pepper

Using a food processor blend all ingredients until bacon is fine. Place bacon into a casserole dish that is lined with paper towels. Place more paper towels on top of bacon. Press until you get most of the bacon fat removed.


Finish It Off Directions

Mix marscapone with vanilla and maple syrup. Put to the side. Put heavy cream in a kitchen aid stand mixer and whip to soft peaks. Fold whipped cream with a rubber spatula into the marscapone mixture slowly to where everything is just barely incorporated. Place a waffle on the plate. Drizzle with maple reduction. Placed fried chicken on waffle. Use a dollop of marscapone mousse on top of the chicken. Sprinkle with bacon dust.
