Bacon Scotch Eggs with Bacon Bourbon Dipping Sauce

For fresh sausage
  1. per 1 pound of lean ground pork
  2. 1 tsp salt
  3. 1/4 tsp pepper
  4. 1/4 tsp sage
  5. 1/4 tsp red pepper flakes
  6. 1/4 tsp thyme
  7. 1/4 tsp marjoram
For Bacon Bourbon Cream Dipping Sauce
  1. 1 Tbsp bacon grease
  2. 3 chopped scallions
  3. 1/4 C bourbon
  4. 3/4 C sour cream
  5. 2 tsp honey
  6. 2 tsp Dijon mustard
  7. 1/4 tsp salt
  8. pepper to taste
  9. 1/2 pound crumbled crispy bacon
For Sausage
  1. 1. Mix chopped uncooked bacon into sausage ratio of 5:1 (for example, 5 lbs of sausage to 1 lb of bacon)
  2. 2. Boil eggs, peel shell, and wrap in bacon sausage mixture (use 1/4 lb sausage mixture for each egg)
  3. 3. Deep fry wrapped egg in oil at 350 degrees for 8 minutes
  4. 4. Cut in half and serve with dipping sauce
For dipping sauce
  1. 1. Heat bacon grease
  2. 2. Add chopped scallions and saute for 30-45 seconds
  3. 3. Carefully add bourbon and flambe' to cook off all alcohol
  4. 4. Let mixture cool slightly
  5. 5. Mix remaining ingredients
  6. 6. Add the bacon grease/ scallion/ bourbon and mix completely
  7. 7. Chill for at least one hour
