Ingredients
  1. Bacon-Poblano Chowder
  2. 4 pounds bacon, ½ inch cooked to almost crispy
  3. 4-5 potatoes, diced
  4. 2 onions, diced
  5. 3 carrots, diced
  6. 2 ½ sticks of butter, saute
  7. 1 tablespoon ea, thyme, cumin, and coriander
  8. ¾ cup flour to make gentle roux
  9. Salt and pepper to taste
  10. 2 (32oz) chicken broth
  11. 5 (15.25oz) cans sweet corn with juice, cook until vegetables are tender
  12. 6 cups dehydrated hash brown potatoes
  13. 1 quart whole milk (add last)
  14. 5 tablespoons lemon juice
  15. Chalula to taste
  16. Pan de Campo
  17. Pizza dough ball
  18. Corn meal
  19. Salt
  20. Bacon grease
  21. Roll flat, sprinkle with cornmeal and salt, grill until brown
  22. Bacon-Bourbon-Raspberry Chipotle Jam
  23. 1 ½ cup fischer and wieser raspberry chipotle sauce
  24. 1 cup crumbled, cook bacon
  25. 2 tablespoons Bourbon (Makers Mark)
  26. 1 tablespoon balsamic vinegar
  27. Simmer until thick like pourable jam
