Ingredients
  1. 1 pound box macaroni
  2. 1 pound shredded cheddar
  3. 1 pound mexican blend shredded cheese
  4. 1 pound mozzarella shredded cheese
  5. 1 stick of butter
  6. ½ cup flour
  7. 1 pint heavy cream
  8. 1 pint whle milk
  9. 2 tablespoons cajun seasoning
  10. 4 eggs
  11. 1 box panko
  12. ½ pound bacon
  13. 1 gallon vegetable oil
  14. Bacon grease
Bacon-Avocado Ranch Dressing
  1. ¼ cup mayo
  2. ¼ cup sour cream
  3. 1 avocado, pitted, peeled and diced
  4. ¼ cup chopped parsley
  5. 3 cloves garlic, minced
  6. 3 tablespoons milk
  7. 1 tablespoon olive oil
  8. ½ lime, juiced
  9. Salt and pepper
  10. 4 slices of crispy bacon
Instructions
  1. Boil macaroni as directed
  2. Cook bacon @ 400 degrees in oven, on rack in pan until crispy
  3. Combine bacon grease, butter in large sauce pot and cook on medium heat until melted and combined. Add flour and whisk until browned
  4. Add heavy cream & cajun seasoning & 1 cup cheddar, ½ cup mexican blend, ½ cup mozzarella & whisk until mixture is melted and combined. Add milk as needed to make creamy.
  5. Drain noodles and put in 9x13 baking dish
  6. Add remaining cheese & crumbled bacon
  7. Allow to cool in fridge at least 2 hours
  8. Scoop macaroni into 1” balls, place in egg wash, roll in panko and fry @ 350 degrees for 1-1 ½ minutes or until golden
  9. Combine dressing ingredients in food processor until consistency is creamy and transfer to airtight container.
  10. Serve bacon mac snack with dressing and enjoy
