Bacon Lattice Wrapped Pulled-Pork Tacos with Creamy Slaw and Bacon Hot Sauce

For taco
  1. Boston Butt or Pork Shoulder
  2. BBQ rub- AR's secret BBQ rub
  3. Bacon
  4. Coleslaw
  5. Hot Sauce
For Coleslaw
  1. Cabbage
  2. Mayonnaise
  3. Sugar
  4. Red wine vinegar
  5. Onion
  6. Dry mustard powder
  7. Celery seeds
  8. Lemon juice
  9. Salt
  10. Pepper
For hot sauce
  1. Bacon reduction
  2. Onion
  3. Vinegar
  4. Cayenne pepper
  5. Salt
  6. Pepper
  7. Garlic
  8. Sugar
Instructions
  1. 1. Rub the pork generously at least 1 hour before cooking
  2. 2. Place pork in smoked for approx. 6-7 hours at 275 degrees
  3. 3. Combine all ingredients for Coleslaw and place in refrigerator for remainder of cooking time for pork
  4. 4. Combine all ingredients for hot sauce and cook over medium heat
  5. 5. Lattice the bacon and place on a rack to make the bacon taco
  6. 6. After 6-7 hours, let pork rest for at least one hour before pulling apart
  7. 7. Take taco and fill with pork, add coleslaw, and drizzle with hot sauce
  8. 8. Enjoy!
