Bacon Apple Fried Pies with Caramel Sauce

Ingredients
  1. Either store-bought or homemade pie crust
For filling
  1. 1/4 C unsalted butter
  2. 1/4 C granulated sugar
  3. 2 lg Granny Smith apples peeled, cored, and chopped (about 2 C)
  4. 1 Tbsp brown sugar
  5. 1/4 Tbsp ground nutmeg
  6. 1/2 Tbsp ground cinnamon
  7. 12 strips Pederson's bacon (cooked and chopped)
For caramel sauce
  1. 1 lb butter
  2. 1 lb brown sugar
  3. 1 C heavy cream
  4. 2 Tbsp Applejack bourbon
For filling
  1. 1. Add all ingredients in a pan and cook over medium heat for 15-20 minutes. Set aside to cool
  2. 2. Roll out the pie crust dough about 1/8 inch thick and cut into 4 inch circles
  3. 3. Place about 1 Tbsp filling in center, sprinkle with bacon bits, fold in half and press edges with a fork.
  4. 4. Place in hot oil until golden brown
  5. 5. Drizzle with sauce and bacon bits and serve with vanilla ice cream
